Saskatoon Skillet Pie
1 pie crust recipe ( I use this one - make ahead)
4 cup saskatoon berries (or any berry you want!)
1/2 cup sugar
2 1/2 tbsp cornstarch
1 tbsp lemon juice
Lightly butter cast iron skillet.
Roll out pie dough to the size of your skillet, drape over and gently press into skillet leaving an inch overhang.
Gently toss berries with sugar, cornstarch, and lemon juice.
Add berry mixture to the skillet.
Fold the overhanging pie crust over the berries.
Maple Crumble
1/4 cup oatmeal
1/4 cup flour
1/2 brown sugar
6 tbsp cold butter
2 tbsp maple syrup
Combine oatmeal, flour, and sugar. Cut in butter with fork or pastry cutter until crumbly and then stir in maple syrup.
Top pie with crumble. Bake in oven at 375F for 50-60 min.
Enjoy (with ice cream)!
